Healthy Salmon Quinoa Bowl

Protein: ± 36 g per serving

Ingredients:

  • 2 VÅRLAKS salmon fillets (±130 g each)

  • 100 g red quinoa (uncooked)

  • 1 ripe avocado

  • 1 roasted red bell pepper, sliced

  • A handful of cherry tomatoes, halved

  • Mixed lettuce & arugula

  • 1 lemon

  • 1 tbsp olive oil

  • Salt & pepper

  • Optional, but encouraged: Sesame seeds or chili flakes

Steps:

  • Cook the red quinoa according to the package instructions. Let it cool slightly.
  • Season the salmon with salt, pepper and a squeeze of lemon. Pan-fry in olive oil for 2–3 minutes per side, until just cooked and flaky.
  • Mash the avocado with lemon juice, salt and a splash of olive oil until smooth and creamy.
  • Build your bowl: start with lettuce and arugula, add quinoa, roasted pepper and tomatoes.
  • Place the salmon on top. Finish with avocado sauce.
  • Add sesame seeds or chili flakes if you like a little extra attitude.
